Mint Radish Rice

img_5410This is a quick and tasty lunch recipe made with radish. It can be prepared when you have leftover rice. You can prepare this quickly and you can easily prepare this when you are in a hurry. The addition of mint adds extra nice flavor to the dish. The recipe is as follows

Preparation Time: 20minutes

Cooking Time: 30minutes

Ingredients:

  • Cooked Rice/Leftover Rice -1cup
  • Radish/Mullangi -2
  • Big onion -1
  • Mustard seeds/Kadugu -1/2tsp
  • Cumin Seeds -1/4tsp
  • Urad Dal/Ulunthu -1/4tsp
  • Curry leaves –A spring
  • Chilli powder/Milagai thool -1/2tsp
  • Tomato -1
  • Mint leaves -2tblsp
  • Salt –As required
  • Oil -As required

Preparation:

  • Cook Rice
  • Chop onion into small pieces
  • Grind tomato to a fine puree
  • Grind mint leaves coarsely without adding water

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal, cumin seeds, curry leaves and onion and fry till onion becomes golden brown in color
  • Then add grinded tomatoes and mix well till it gets cooked
  • Then add chilli powder and salt and mix well
  • Then add coarsely grinded mint and mix well
  • Then add rice and mix well
  • Mint Radish Rice is now ready!!!

Step by Step Procedure:
