Sweet Potato Spring Onion Fry

img_5388This is a tasty fry made with sweet potatoes and spring onion. It can be taken as a side dish with hot steamed rice. It can be prepared quickly when you are in a hurry. It is healthy and can be given to kids who like it very much. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 20minutes

Ingredients:

  • Spring onion (White part) -5
  • Spring Onion (Green part) -3tblsp
  • Sweet potato -2
  • Mustard seeds/Kadugu -1/2tsp
  • Urad Dal/Ulunthu -1/4tsp
  • Curry leaves – A spring
  • Pepper powder/Milagu thool -1/4tsp
  • Salt –As required
  • Oil -As required

Preparation:

  • Chop white and green pat of spring onion into small pieces
  • Boil and peel the skin of sweet potato and mash it well

Procedure:

  • Boil and peel the skin of sweet potato and mash it well
  • Pour oil in a pan
  • Add mustard seeds, urad dal, curry leaves and white part of spring onion and fry
  • Then add mashed sweet potato and salt and pepper powder and mix well
  • Add spring onion and mix it
  • Sweet Potato Spring Onion Fry is now ready!!!

Step by Step Procedure:

Boil and peel the skin of sweet potato and mash it well. Pour oil in a pan. Add mustard seeds, urad dal, curry leaves and white part of spring onion and fry
