Brinjal Rasam/Kathirikai Rasam/Eggplant Rasam

img_4670This is a tasty rasam made with brinjal. It can be taken with hot steamed rice. The preparation is simple and you can easily prepare this when you are in a hurry. The recipe is as follows

Preparation Time: 20minutes

Cooking Time: 30minutes

Ingredients:

  • Brinjal/Egg plant/Kathirikai -2
  • Onion -2tblsp chopped
  • Tomato -1
  • Tamarind –a small lemon size
  • Red chilli -1
  • Red chilli powder/Milagai thool -1/2tsp
  • Corinader powder/Malli thool -1tsp
  • Turmeric powder/Manjal thool -1/4tspMustard seeds/Kadugu -1tsp
  • Cumin seeds/Seerakam -1/4tsp
  • Curry leaves –A spring
  • Garlic -3
  • Coriander leaves –2tblsp chopped
  • Salt –As required
  • Oil -As required

Preparation:

  • Chop onion and tomato into small pieces
  • Wash and chop brinjal into slices
  • Extract tamarind water from tamarind

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, cumin seeds, curry leaves, red chilli and onion and fry till onion becomes golden brown in color
  • Then add tomatoes and mix well
  • Then add brinjal and crushed garlic and mix well
  • Then add chilli powder, coriander powder, turmeric powder and salt and mix well
  • Then add tamarind water and boil
  • Then add coriander leaves and serve
  • Brinjal Rasam is now ready!!!

Step by Step Procedure:
