Brinjal Drumstick Ivy Gourd Curry/Kathirikai murungakai kovakkai kulambu

IMG_4265This is a tasty and easy curry made with Brinjal, drumstick and ivy gourd. It can be taken with rice, idli and dosa. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 35minutes

Ingredients:

  • Small onion/Shallots/Sambar onion -1/2cup
  • Garlic -5
  • Brinjal/Kathirikai -2
  • Drumstick/Murungakai -1
  • Ivy Gourd/Kovakai -4
  • Mustard seeds/Kadugu -1tsp
  • Fenugreek/Venthayam -1/4tsp
  • Curry leaves –A spring
  • Tomato -1
  • Red chilli powder/Milagai thool -1tsp
  • Coriander powder/Malli thool -2tsp
  • Turmeric powder/Manjal thool -1tsp
  • Tamarind Water -1cup (Soak lemon size tamarind in water and extract the juice)
  • Coconut -1/4cup
  • Green chilli -2
  • Fennel seeds/Sombu/Perunjeerakam -1/4tsp
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

For Grinding:

  • Coconut -1/4cup
  • Green chilli -2
  • Fennel seeds/Sombu/Perunjeerakam -1/4tsp

Grind this to a fine paste by adding water

Preparation:

  • Pressure cook brinjal, drumstick and ivy gourd with water for 2whistles in high flame
  • Chop onion and tomato into small pieces
  • Soak lemon size tamarind in water and extract the juice
  • Grind coconut, fennel seeds and green chilli to a fine paste by adding water

Procedure:

  • Pour 1tblsp oil in a pan
  • Add onion and fry till it becomes golden brown in color
  • Then add tomatoes and mix well till it becomes soft
  • Then add chilli powder, coriander powder, turmeric powder  and mix well and switch off the flame and allow to cool and then grind it to a fine paste
  • Pour 1tsp oil in a pan
  • Add mustard seeds, fenugreek, garlic, curry leaves and fry
  • Then add tamarind water and boil well
  • Add the grinded onion tomato paste and boil. Then add required salt and boil
  • Grind coconut, fennel seeds and green chilli to a fine paste by adding water and add this and boil
  • Add boiled vegetables and boil
  • Brinjal Drumstick Ivy Gourd Curry is now ready!!!

Step by Step Procedure:

Pour 1tblsp oil in a pan. Add onion and fry till it becomes golden brown in color. Then add tomatoes and mix well till it becomes soft. Then add chilli powder, coriander powder, turmeric powder  and mix well and switch off the flame and allow to cool and then grind it to a fine paste
