Cucumber Rice

IMG_3882This is a tasty and quick recipe with grated cucumber added to it. The preparation is very simple and you can easily prepare when you are in a hurry. You can also prepare this when you have leftover rice at home. The recipe is as follows

Preparation Time: 20minutes

Cooking Time: 30minutes

Ingredients:

  • Leftover Rice/Cooked Rice -1cup
  • Grated Cucumber -1/4cup
  • Grated Coconut -1/4cup
  • Green chilli -2
  • Onion -1
  • Red chilli -1
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham Parupu -1/4tsp
  • Curry leaves –A spring
  • Cumin Seeds/Seeragam -1/4tsp
  • Channa Dal/Kadalai Parupu -1/2tsp
  • Salt –As required
  • Oil -As required

Preparation:

  • Cook Rice
  • Grate Cucumber
  • Grate Coconut

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal, cumin seeds, channa dal, green chilli, red chilli and curry leaves and fry
  • Then add onion and fry till it becomes golden brown in color
  • Then add grated coconut and fry
  • Then add grated cucumber and mix well
  • Then add rice and salt and mix well
  • Cucumber Rice is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds, urad dal, cumin seeds, channa dal, green chilli, red chilli and curry leaves and fry. Then add onion and fry till it becomes golden brown in color. Then add grated coconut and fry
