Thekua Cookies/Khajuri

IMG_4215This is a tasty and quick snack which can be made easily. It does not involve baking and you can prepare this easily at home. The taste will be so great and it will be great for an evening snack with a cup of tea. This is healthy as it is done with wheat flour. You can prepare this in bulk and store it in an airtight container and store this up to a month. The recipe is as follows

Preparation Time: 20minutes

Cooking Time: 30minutes

Ingredients:

  • Wheat Flour/Atta -1cup
  • Rava/Sooji/Semolina -3tblsp
  • Desiccated Coconut -1tblsp
  • Sugar -3tblsp
  • Ghee -2tblsp
  • Cardamom/Elakai/Elachi -1tsp
  • Milk –As required
  • Oil –For deep frying

Preparation:

  • Powder sugar and cardamom in a blender

Procedure:

  • In a mixing bowl add wheat flour, rava, coconut, sugar and ghee and add milk and knead it to form dough
  • Roll this with a rolling pin and use a cookie cutter and cut it to your favorite shape
  • Pour oil in a pan for deep frying and fry till it turns golden brown and drain it in a kitchen towel
  • Allow it to cool down and store it in an airtight container
  • Thekua Cookies is now ready!!!

Step by Step Procedure:
