Brinjal Raw Mango Curry/Kathirikai Mangai pulikulambu

IMG_3521This is a tasty and easy curry with brinjal and raw mango(mangai) added to it. It can be taken with rice, idli and dosa. It is tangy and the taste will be very nice. You can prepare this curry and keep for  3-4 days by storing in refrigerator. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 35minutes

Ingredients:

  • Brinjal/Kathirikai -2
  • Raw Mango/Mangai -1(small)
  • Small onion/Shallots -1/4cup
  • Curry leaves –A spring
  • Tomato -2
  • Mustard Seeds/Kadugu -1/2tsp
  • Coconut Paste -1/4cup
  • Tamarind Water -1/2cup (Soak lemon size tamarind in water and extract the juice)
  • Coriander leaves -1tsp
  • Fenugreek/Ventahyam -1/4tsp
  • Red chilli powder/Milagai thool -1tsp
  • Coriander powder/Malli thool -2tsp
  • Turmeric powder/Manjal thool -1/2tsp
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Chop onion and tomato into small pieces
  • Wash and chop brinjal and raw mango into small pieces
  • Soak lemon size tamarind in water and extract the juice
  • Grind coconut with water to form a paste

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, fenugreek seeds, curry leaves and onion and fry till onion turns brown
  • Then add tomato and mix well and fry
  • Then add chilli powder, coriander powder and turmeric powder and salt and mix well
  • Then add chopped brinjal and boil
  • Add chopped mangai and boil
  • Then add tamarind water and salt and allow to boil
  • Grind coconut with water to form a paste and add this and mix well
  • Then add coriander leaves and switch off the flame
  • Brinjal Raw Mango Curry is now ready!!!
