Peanut Rice

IMG_3916This is a quick and easy variety rice recipe with peanuts added to it. You can prepare this when you have leftover rice too. You can prepare this for kids easily when they go to school. It tastes very nice and surely will be liked by all. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 20minutes

Ingredients:

  • Cooked Rice -1/2cup
  • Peanuts/Nilakadalai -1/4cup+1tblsp
  • White Sesame Seeds/Ellu -1tblsp
  • Red chilli -2
  • Coconut Gratings -2tblsp
  • Urad Dal/Ulutham Parupu -1tsp
  • Mustard Seeds/Kadugu -1/2tsp
  • Curry leaves –A spring
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Dry fry peanuts (1/4cup), white sesame seeds, red chilli, coconut gratings and urad dal and grind it to a fine mixture without adding water
  • Cook Rice

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, peanuts (1tblsp) and curry leaves and fry and add this to rice and mix well
  • Dry fry peanuts, white sesame seeds, red chilli, coconut gratings and urad dal and grind it to a fine mixture without adding water
  • Then add this powder to rice and mix well
  • Peanut Rice is now ready!!!

Step by Step Procedure:
