Cucumber Fry/Vellarikai Kootu

IMG_3719This is a tasty side dish made with cucumber. It can be taken as a side dish with rice.It requires few ingredients and can be done very quickly. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Cucumber/Vellarikai -1
  • Big onion -1
  • Mustard Seeds/Kadugu -1/2tsp
  • Cumin Seeds/Seerakam -1/2tsp
  • Turmeric powder/Manjal thool -1/2tsp
  • Curry leaves –A spring
  • Coconut Gratings -1/4cup
  • Green Chilli -4
  • Fennel Powder/Sombu thool/Perunjeeraka Thool -1/4tsp
  • Coriander leaves –A spring
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Chop onion into small pieces
  • Peel the skin from cucumber and chop it into small pieces
  • Grind coconut, green chilli and fennel powder coarsely without adding water

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, cumin seeds, curry leaves and onion and fry till onion turns golden brown in color
  • Then add chopped cucumber and fry
  • Add turmeric powder and salt and mix well
  • Grind coconut, green chilli and fennel powder coarsely without adding water and add this and mix well
  • Then add coriander leaves and mix well
  • Cucumber Fry is now ready!!!
