Cashew Chicken Curry

IMG_3136This is a tasty curry made with chicken. It can be taken with rice, idli, dosa, parota, chapatti and naan. The taste will be really nice and you will really like it. The recipe is as follows

Preparation Time: 30minutes

Cooking Time: 45minutes

Marination Time : 30minutes

Ingredients:

  • Chicken -1/2kg
  • Big onion -2+2tblsp
  • Cashews -15
  • Channa Dal/Kadalai parupu -1tsp
  • Cumin seeds/Seerakam -1/4tsp
  • Fennel Seeds/Sombu/Perunjeerakam -1tsp
  • Star Anise -1
  • Cinnamon/Pattai -1inch piece
  • Cloves/Krambu -2
  • Cardamom/Elakai/Elachi -1
  • Ginger Garlic paste -1tblsp
  • Tomato -3 + 1/2
  • Coconut Gratings -1/4cup
  • Mint leaves -1/4cup
  • Coriander leaves -1/4cup
  • Biriyani leaf -1
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

For Roasting and Grinding:

  • Cashews -15
  • Channa Dal/Kadalai parupu -1tsp
  • Cumin seeds/Seerakam -1/4tsp
  • Fennel Seeds/Sombu/Perunjeerakam -1tsp
  • Star Anise -1
  • Cinnamon/Pattai -1inch piece
  • Cloves/Krambu -2
  • Cardamom/Elakai/Elachi -1

Roast these one by one in 1tsp oil and grind to a fine paste by adding water

Preparation:

  • Wash chicken pieces well in water
  • Chop onion into small pieces
  • Grind tomato to fine puree
  • Grind everything given under “For Roasting and Grinding” to a fine paste by adding water
  • Grind mint and coriander leaves and marinate it with chicken for 30minutes

Procedure:

  • Pour 1tblsp oil in a pan
  • Add big onion and fry till onion becomes golden brown in color
  • Add ginger garlic paste and mix well
  • Then add tomato puree and fry well till the raw smell leaves off
  • Add coconut gratings and switch off the flame and allow to cool and grind it to a fine paste by adding water
  • Pour 2tblsp oil in a cooker
  • Add biriyani leaf and 2tblsp onion and fry
  • Then add ½ tomato and fry well till it becomes soft
  • Then add grinded masala and marinated chicken and mix well
  • Add the roasted and grinded spice mix and mix well and add water and pressure cook for 2whistles in high flame and in low flame for 15minutes
  • Cashew Chicken Curry is now ready!!!
