Brinjal Ladyfingers Curry/Kathirikai Vendakkai Pulikulambu

IMG_2243This is a tasty and healthy curry recipe made with brinjal and ladyfingers. It can be taken with rice, idli and dosa. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Onion -1/2cup
  • Mustard seeds -1tsp
  • Urad Dal/Ulutham parupu -1/4tsp
  • Curry leaves –A spring
  • Tomato -1
  • Brinjal -2
  • Ladyfingers -5-8
  • Tamarind Water -1cup (Soak lemon size tamarind in water and extract the juice)
  • Coconut -1/4cup
  • Coriander powder/Malli thool -2tblsp
  • Chilli powder/Milagai thool -1tblsp
  • Turmeric powder/Manjal thool -1tsp
  • Shallots -5
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

For Grinding:

  • Coconut -1/4cup
  • Coriander powder/Malli thool -2tblsp
  • Shallots/Small onion/Sambar onino -5

Grind this to a fine paste by adding water

Preparation:

  • Chop onion and tomato into small pieces
  • Soak lemon size tamarind in water and extract the juice
  • Wash and chop brinjal and ladyfingers to small pieces

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal, curry leaves and onion and fry till onion becomes golden brown in color
  • Add tomatoes and mix well it becomes soft
  • Then add turmeric powder, chilli powder, brinjal and ladyfingers and fry
  • Add tamarind water and add salt and boil
  • Grind coconut, shallots and coriander powder to a fine paste and add this and mix well and boil
  • Brinjal Ladyfingers Curry is now ready!!!

Step by Step Procedure:
