White Pumpkin Sambar/Poosanikai Sambar

IMG_1282This is a tasty and easy sambar made with white pumpkin. It can be taken with rice, idli and dosa. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 30minutes

Ingredients:

  • Toor Dal/Thuvaram parupu -1/2cup
  • White Pumpkin -1/2cup
  • Small onion/Shallots/Sambar onion -1/4cup
  • Curry leaves –A spring
  • Mustard seeds/Kadugu -1tsp
  • Hing/Asafoetida/Perunkayam -1/2tsp
  • Tomato -1
  • Sambar Powder -1tblsp
  • Turmeric powder/Manjal thool -1tsp
  • Tamarind Water -1/2cup (Soak a small lemon size tamarind in water and extract the juice)
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Pressure cook toor dal
  • Chop onion, tomato and pumpkin into small pieces
  • Soak a small lemon size tamarind in water and extract the juice

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, hing, curry leaves and onion and fry
  • Then add tomato and fry well
  • Add white pumpkin and mix
  • Add sambar powder, turmeric powder and salt and mix well
  • Then add cooked dal and mix well
  • Add tamarind water and 1cup water and allow to boil
  • White Pumpkin Sambar is now ready!!!

Step by Step Procedure:
