Ivy Gourd Rice/Kovakkai Sadam/Tindora Rice

IMG_2344This is a healthy and easy variety rice recipe made with ivy gourd. It can also be done if you have leftover rice. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 30minutes

Ingredients:

  • Ivy gourd/Tindora/Kovakkai -10-15
  • Cooked Rice -1cup
  • Red chilli -4
  • Channa Dal/Kadalai parupu -1tblsp
  • Urad Dal/Ulutham Parupu -1tsp
  • Pepper/Milagu -1tsp
  • Sesame Seeds/Ellu -1tsp
  • Cococnut Gratings -2tblsp
  • Coriander powder/Malli thool -1tblsp
  • Mustard seeds/Kadugu -1tsp
  • Cumin seeds/Seerakam -1tsp
  • Curry leaves –A spring
  • Lemon juice -1tsp
  • Coriander leaves –A spring
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Cook Rice
  • Wash and chop ivy gourd into small pieces

Procedure:

  • Pour 2tsp oil in a pan
  • Add red chilli, channa dal, urad dal. Pepper, sesame seeds and coconut gratings and fry and allow it to cool and grind it with coriander powder by adding water
  • Pour oil in a pan
  • Add mustard seeds, cumin seeds, curry leaves and ivy gourd and fry
  • Then add the grinded paste and mix well
  • Add rice and mix well
  • Add coriander leaves and lemon juice and mix
  • Ivy Gourd Rice is now ready!!!

Step by Step Procedure:
