Carrot Beans Capsicum Fry

IMG_2008This is a quick and a healthy fry made with carrot, beans and capsicum. It can be taken as a side dish with rice. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Carrot -2
  • Beans -5-8
  • Capsicum -1/2
  • Mustard seeds/Kadugu -1/2tsp
  • Cumin seeds/Seerakam -1/2tsp
  • Urad dal/Ulutham parupu –A pinch
  • Curry leaves –A spring
  • Red chilli powder/Milagai tool -1tsp
  • Coriander powder/Malli thool -/4tsp
  • Turmeric powder/Manjal thool -1/4tsp
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Chop carrot, beans and capsicum into small pieces

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, cumin seeds, urad dal and curry leaves and fry
  • Then add carrot and beans and fry
  • Add capsicum and fry till it gets cooked
  • Then add chilli powder, coriander powder, turmeric powder and salt and mix well
  • Carrot Beans Capsicum Fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds, cumin seeds, urad dal and curry leaves and fry
