Broad Beans Egg Fry/Avarakkai Muttai Kootu

IMG_2251This is a healthy and tasty recipe made with eggs and broad beans. It can be taken as a side dish with rice. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Broad Beans/Avarakkai -1/2cup
  • Big onion -1
  • Garlic -5
  • Curry leaves –A spring
  • Mustard seeds/Kadugu -1tsp
  • Cumin seeds/Seerakam -1/2tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Tomato -1
  • Egg -1
  • Red chilli powder/Milagai thool -1tsp
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Chop onion and tomato into small pieces
  • Wash and chop broad beans into small pieces

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal,cumin seeds, curry leaves and onion and fry
  • Then add tomato and fry
  • Add broad beans and fry till it gets cooked
  • Then add egg, chilli powder and salt and mix well
  • Broad Beans Egg Fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds, urad dal,cumin seeds, curry leaves and onion and fry
