Brinjal Plantain Fry With Toor Dal

IMG_2341This is a tasty and easy fry made with brinjal and plantain with toor dal added to it. It is healthy and will be surely enjoyed by everyone. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Brinjal -3
  • Plantain -1
  • Toor Dal -1/2cup
  • Tamarind water -1/2cup (Soak a small gooseberry size tamarind in water and extract the juice)
  • Asafoetida/Hing/Perunkayam -1/4tsp
  • Turmeric powder/Manjal thool -1/2tsp
  • Coriander powder/Malli thool -2tblsp
  • Red chilli powder/Milagai thool -1tblsp
  • Salt –1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Chop brinjal and plantain into small pieces
  • Cook toor dal and mash it well

Procedure:

  • Take tamarind water in a pan and add brinjal and plantain and boil and add salt, turmeric powder and hing
  • Add cooked dal and mix well
  • Add coriander powder, chilli powder and salt and mix well
  • Brinjal Plantain Fry is now ready!!!
