Brinjal Masala Roast

IMG_2270This is a tasty brinjal masala with a nice masala in it. It can be taken as a side dish with rice. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 30minutes

Ingredients:

  • Brinjal/Eggplant/Kathirikai -2
  • Big onion -1
  • Tomato -1
  • Red chili powder/Milagai thool -1tblsp
  • Coriander powder/Malli thool -2tblsp
  • Cumin powder/Seeraka thool -1tsp
  • Fennel powder/Sombu powder/Perunjeeraka thool -1tsp
  • Turmeric powder/Manjal thool -1tsp
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Chop onion into small pieces
  • Wash and chop brinjal into small pieces

Procedure:

  • Pour oil in a pan
  • Add onion and fry till it reaches golden brown in color
  • Add tomato and mix well
  • Then add red chilli powder, coriander powder, turmeric powder, fennel powder, cumin powder and salt and mix well
  • Then add brinjal and mix well and fry
  • Brinjal Masala Roast is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add onion and fry till it reaches golden brown in color
