Mint Egg Curry/Pudhina Muttai Kulambu

IMG_9620This is a tasty and easy curry made with mint leaves. It can be taken with rice, idli, dosa and chapati. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 25minutes

Ingredients:

  • Mint leaves -1/4cup
  • Eggs -2
  • Cinnamon/Pattai -1inch piece
  • Cloves/Krambu -1
  • Cardamom/Elakai/Elachi -3
  • Red chili powder/Milagai thool -1tblsp
  • Coriander powder/Malli thool -1tsp
  • Tamarind Water -1cup (Soak lemon size tamarind in water and extract the juice)
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham Parupu -1/4tsp
  • Fenugreek?Venthayam -1/4tsp
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

For Grinding:

  • Mint leaves -1/4cup
  • Cinnamon/Pattai -1inch piece
  • Cloves/Krambu -1
  • Cardamom/Elakai/Elachi -3

Grind this to a smooth paste by adding water

Preparation:

  • Wash mint leaves
  • Boil eggs
  • Grind mint leaves, cinnamon, cloves and cardamom to a fine paste by adding water

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal, fenugreek and fry and add the grinded paste and fry till the raw smell leaves away
  • Then add red chilli powder, coriander powder and salt and mix well
  • Then add tamarind water and boil
  • Then add the boiled eggs and boil for few minutes
  • Mint Egg Curry is now ready!!!

Step by Step Procedure:
