Ladyfingers Egg Fry/Vendakkai Muttai Poriyal

IMG_0897This is a tasty fry made with ladyfingers and egg. It goes well as a side dish for rice. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 25minutes

Ingredients:

  • Ladyfingers/Vendakkai -15
  • Egg -1
  • Big onion -1
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham Parupu -1/2tsp
  • Curry leaves –A spring
  • Red chilli powder/Milagai thool -2tsp
  • Coconut gratings -1/4cup
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Wash and chop ladyfingers into small pieces
  • Chop onion into small pieces
  • Beat egg in a bowl

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal and onion and fry
  • Then add curry leaves and fry
  • Then add ladyfingers and fry well till it gets cooked
  • Then add chilli powder and salt and mix well
  • Beat egg in a bowl and add it and mix well
  • Then add coconut gratings and mix well
  • Ladyfingers Egg fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds, urad dal and onion and fry
