Carrot Rice

IMG_0634This is a simple and easy variety rice recipe which you can make quickly when you are in a hurry. You can also prepare this as a lunch box recipe for kids easily and you can do this when you have leftover rice. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 20minutes

Ingredients:

  • Cooked Rice -1cup
  • Carrot -1
  • Peanuts -1/4cup
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham Parupu -1/2tsp
  • Cumin seeds/Seerakam -1/2 tsp
  • Biriyani leaf -1
  • Garlic -1
  • Big onion -1
  • Fennel powder/Sombu powder/Perunjeeraka thool -2tsp
  • Corainder powder/Malli thool -1tsp
  • Turmeric powder/Manjal thool -1/2tsp
  • Salt -1tsp
  • Oil -1tblsp or as required

Preparation:

  • Cook Rice
  • Chop onion into small pieces
  • Grate carrots using a grater

Procedure:

  • Pour oil in a pan
  • Then add mustard seeds, urad dal, cumin seeds and peanuts and fry
  • Then add biriyani leaf and garlic and fry
  • Add onion and fry
  • Then add carrots and fry well till it gets cooked
  • Then add fennel powder, coriander powder, turmeric powder and salt and mix well
  • Add rice and mix well
  • Carrot Rice is now ready!!!

Step by Step Procedure:
