Brinjal Rice/Vangi Bath/Kathirikai Sadam

IMG_0449This is an easy and tasty variety rice recipe which you can do easily when you are in a hurry. You can also prepare this when you have leftover rice. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 25minutes

Ingredients:

  • Rice -1cup cooked
  • Brinjal -1
  • Onion -1
  • Green chilli -2
  • Curry leaves –A spring
  • Urad Dal/Ulutham Parupu -1tblsp+1tsp
  • Channa Dal/Kadalai parupu -1tblsp+1tsp
  • Coriander seeds/Malli -1tblsp
  • Cumin seeds/Seerakam -1tsp
  • Peanuts/Nilakadalai -1tblsp+1tblsp
  • Red chilli -2
  • Sesame seeds/Ellu/Til -1tsp
  • Coconut -2tblsp
  • Mustard seeds/Kadugu -1tsp
  • Turmeric powder/Manjal thool -1tsp
  • Salt -1tsp or as required
  • Oil -1tblsp+1tblsp or as required

Preparation:

  • Cook rice
  • Chop onion and brinjal to small pieces

Procedure:

  • Pour 2tblsp oil in a pan
  • Add 1tblsp urad dal and fry
  • Then add 1tblsp channa dal and fry
  • Add coriander seeds and fry well
  • Add sesame seeds and mix well
  • Then add red chillies
  • Add 1tblsp peanuts and mix well
  • Add coconut gratings and switch off the flame and grind it to a smooth powder
  • Pour 1tblsp oil in a pan
  • Add mustard seeds, urad dal (1tsp), channa dal (1tsp), peanuts and turmeric powder and mix well
  • Then add onion and fry
  • Then add green chilli and curry leaves and fry well
  • Add salt and brinjal and fry till it gets cooked
  • Add the grinded powder and mix well and add rice and mix with it
  • Brinjal Rice is now ready!!!

Step by Step Procedure:
