Beetroot Capsicum Fry

IMG_1034This is a simple and tasty fry made with beetroots and capsicum. It goes well as a side dish for rice and can be prepared easily. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Beetroot -1
  • Big Onion -1/2
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Cumin seeds/Seerakam -14tsp
  • Curry leaves –A spring
  • Capsicum -1/4
  • Coconut -2tblsp
  • Green chilli -2
  • Salt -1tsp
  • Oil -1tblsp+1tblsp

For Grinding:

  • Coconut -2tblsp
  • Green chilli -2

Grind this coarsely without adding water

Preparation:

  • Chop beetroot into small pieces

Procedure:

  • Pour oil in a pan
  • Add beetroots and fry well and keep aside
  • Pour oil in the same pan
  • Add mustard seeds, urad dal, cumin seeds, curry leaves and onion and fry
  • Then add capsicum and mix well
  • Add beetroots and fry well
  •  Grind coconut and green chilli coarsely without adding water and add this and salt and mix well
  • Beetroot Capsicum Fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add beetroots and fry well and keep aside
