Ash Gourd Fry/White Pumpkin Fry/Poosanikai Kootu

IMG_1276This is a tasty fry made with white pumpkin. It goes well as a side dish with rice. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Ash Gourd/White Pumpkin/Poosanikai -1slice
  • Big onion -1
  • Mustard seeds/Kadugu -1tsp
  • Urad dal/Ulutham parupu -1/2tsp
  • Cumin seeds/Seerakam -1/2tsp
  • Curry leaves –A spring
  • Green chilli -3
  • Coconut -1/2cup
  • Fennel seeds/Sombu/Perunjeerakam -1tsp
  • Salt -1/2tsp or as required
  • Oil -2tblsp or as required

For Grinding:

  • Green chilli -3
  • Coconut -1/2cup
  • Fennel seeds/Sombu/Perunjeerakam -1tsp

Grind this coarsely without adding water

Preparation:

  • Peel the skin and chop pumpkin into small pieces
  • Chop onion into small pieces
  • Grind coconut, green chilli and fennel seeds coarsely without adding water

Procedure:

  • Pour oil in a pan
  • Add mustard seeds, urad dal, cumin seeds, curry leaves and onion and fry
  • Then add white pumpkin and fry till it gets cooked
  • Grind coconut, green chilli and fennel seeds coarsely without adding water and add this and salt and mix well
  • White Pumpkin Fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds, urad dal, cumin seeds, curry leaves and onion and fry
