Yellow Pumpkin Fry/Poosanikai Kootu

IMG_0187This is a tasty fry made with pumpkin. This goes well as a side dish for rice. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 20minutes

Ingredients:

  • Pumpkin -1slice
  • Big onion -1
  • Green chilli -1
  • Curry leaves –A spring
  • Mustard seeds/Kadugu -1tsp
  • Coconut -1/4cup
  • Fennel seeds/Sombu/Perunjeerakam -1tsp
  • Salt -1tsp
  • Oil -3tblsp or as required

For Grinding:

  • Coconut -1/4cup
  • Fennel seeds/Sombu/Perunjeerakam -1tsp

Grind this coarsely without adding water

Preparation:

  • Chop pumpkin into small slices

Procedure:

  • Pour oil in a pan
  • Add mustard seeds and after they crackle, add onion, green chilli and curry leaves and fry
  • Then add pumpkin and cover and cook till it gets cooked
  • Grind coconut and fennel seeds coarsely without adding water and add it to the fry and mix well
  • Pumpkin Fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds and after they crackle, add onion, green chilli and curry leaves and fry
