Vegetable Biriyani

IMG_9545Biriyani is one of the favorite dish of Indian cuisine. For veg likers, the Biriyani can be prepared with the different vegetables, dry fruits and flavors. It is an excellent source of multivitamins contained in a single dish. You can try this very popular Indian dish with the tried out recipes of delicious collection.

Preparation Time: 20minutes

Cooking Time: 30minutes

Ingredients:

  • Basmati Rice -1 and ½ cup
  • Big Onion -2
  • Tomato -1
  • Mixed Veg -1cup (I used carrot, beans, capsicum and potato)
  • Cinnamon/Pattai -1inch piece
  • Cloves/Krambu -2
  • Cardamom/Elakai/Elachi -3
  • Biriyani Leaf -1
  • Fennel Seeds/Sombu/Perunjeerakam -1tsp
  • Ginger Garlic Paste -1tblsp(For homemade ginger garlic paste click here –> Click)
  • Red chilli powder/Milagai thool -1tsp
  • Coriander powder/Malli thool -1tsp
  • Turmeric powder/Manjal thool -1tsp
  • Green chilli -2
  • Mint leaves -10-15
  • Coriander leaves -1/4cup
  • Curd -1/4cup
  • Water -1 and 1/2 cup
  • Salt -2tsp or as required
  • Ghee -3tsp
  • Oil -2tblsp or as required

Preparation:

  • Chop vegetables into small pieces
  • Chop onion, tomatoes and green chilli into small pieces
  • Wash mint and coriander leaves
  • Wash and soak basmati rice for 10minutes

Procedure:

  • Pour oil and ghee in a cooker
  • Add cinnamon, cloves, cardamom, biriyani leaf, fennel seeds and onion and fry till onion becomes golden brown in color
  • Then add ginger garlic paste and mix well
  • Then add chilli powder, coriander powder, turmeric powder and salt and mix well
  • Then add vegetables and tomato and mix well with the masala
  • Then add green chilli, mint leaves and coriander leaves and mix well
  • Then add curd and mix well
  • Add water and allow to boil
  • Add rice and mix well and close cooker and keep for 1whistle in high flame and in low flame for 5minutes
  • Vegetable Biriyani is now ready!!!

Step by Step Procedure:
