Brinjal Ladyfingers Fry/Kathirikai Vendakkai Poriyal

IMG_9762This is a tasty fry which goes well as a side dish for rice. Both of the veggies have a lot of health benefits and can be added in our diet. The recipe is as follows

Preparation Time: 20minutes

Cooking Time: 25minutes

Ingredients:

  • Ladyfingers/Vendakkai -10
  • Brinjal/Kathirikai -1
  • Big onion -1
  • Tomato -1
  • Mustard seeds/Kadugu -1tsp
  • Red chilli powder/Milagai thool -2tsp
  • Coriander powder/Malli thool -1tsp
  • Turmeric powder/Manjal thool -1tsp
  • Salt -1tsp or as required
  • Oil -3tblsp or as required

Preparation:

  • Wash and chop ladyfingers and brinjal into small pieces
  • Chop onion and tomato into small pieces

Procedure:

  • Pour oil in a pan
  • Add mustard seeds and after they crackle add onion and fry
  • Then add ladysfinger and brinjal and fry
  • Add tomatoes and mix well
  • Cover and cook till all the veggies gets cooked
  • Then add chilli powder, coriander powder and salt and mix well
  • Brinjal Ladyfingers fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds and after they crackle add onion and fry
