Vermicelli Upma/Semiya Upma

IMG_8810This is a quick and easy breakfast with mixed veggies, vermicelli and other spices. This is healthy too as it has lot of veggies in it. This can be prepared for breakfast easily in few minutes. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 20minutes

Ingredients:

  • Vermicelli/Semiya -1/2cup
  • Big Onion -1
  • Mixed Veggies -1/2cup (You can use carrots, beans, peas and any veggies as you wish)
  • Coriander leaves -1tblsp
  • Water -1cup
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Ginger -1tsp
  • Green Chilli -1
  • Hing/Asafoetida/Perunkayam -1tsp
  • Curry leaves –A spring
  • Salt -2tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Chop veggies into small pieces
  • Chop onion, green chilli, and ginger into small pieces

Procedure:

  • Dry roast vermicelli in a pan in low flame till it gets roasted evenly
  • Pour oil in a pan
  • Then add mustard seeds, urad dal, ginger, green chilli, hing, curry leaves, onion and fry till inion becomes golden brown in color
  • Then add mixed veggies and mix well
  • Then add water and boil till the vegetables gets cooked
  • Then add the roasted vermicelli and mix well in low flame
  • Then add chopped coriander leaves and mix
  • Vermicelli Upma is now ready!!!

Step by Step Procedure:

Dry roast vermicelli in a pan in low flame till it gets roasted evenly
