Peanut Sundal/Groundnut Sundal/Verkadalai Sundal

IMG_7884This is a tasty sundal recipe made with peanuts. This is an easy and a healthy breakfast which will be tasty too. I used dry peanuts and so soaking is a must. You can buy this dry peanuts from stores.  This is a quick and easy snack which is rich in protein and yummy. Adding onions is optional but it gives an extra taste. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 30minutes

Soaking Time: 8-10hours

Ingredients:

  • Dry Peanuts -1 and ½ cup
  • Big Onion -1
  • Mustard Seeds/Kadugu -1tsp
  • Urad Dal/Ulutham Parupu -1/2 tsp
  • Cumin Seeds/Seerakam -1tsp
  • Curry Leaves –A spring
  • Green Chilli -1
  • Coconut gratings -1/4 cup
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Soak peanut for8-10hours
  • Chop onion and green chilli into small pieces

Procedure:

  • Soak peanut for8-10hours and drain the water and add it in a pressure cooker and add 1cup water and pressure cook it for 3whistles in high flame and in low flame for 20minutes
  • After the pressure goes by itself open the cooker and drain water and keep the peanuts aside
  • Pour oil in a pan
  • Add mustard seeds, urad dal, cumin seeds, curry leaves, green chilli, onion and fry till onions become golden brown in color
  • Then add the boiled peanuts and fry
  • Then add salt and coconut gratings and mix well
  • Peanut Sundal is now ready!!!
