Ivy gourd Fry/Tindora Fry/Kovakai Fry

IMG_9227This is a nice fry which goes well as a side dish for rice. Kovakai is also referred to as baby watermelon or little gourd. It has a lot of health benefits too. It normalizes blood sugar level. So it can be added in our diet in any form as we like. Here is a simple fry recipe

Preparation Time: 15minutes

Cooking Time: 30minutes

Ingredients:

  • Ivy gourd/Kovakai/Tindora -150gms
  • Big Onion -2
  • Mustard seeds/Kadugu -1tsp
  • Urad dal/Ultham parupu -1/2tsp
  • Curry leaves –A spring
  • Tomato -1
  • Red chilli powder/Milagai thool -2tsp or as required
  • Coriander powder/Malli thool -2tsp
  • Turmeric powder/Manjal thool -1tsp
  • Salt -2tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Wash and chop ivy gourd into small pieces
  • Chop onion and tomato into small pieces

Procedure:

  • Wash and chop ivy gourd into small pieces
  • Pour oil in a pan
  • Add mustard seeds and after they crackle add urad dal, onion, curry leaf and fry till onion becomes golden brown in color
  • Then add tomatoes and fry well till it becomes soft
  • Then add ivy gourd/kovakai and fry well till it gets cooked
  • Then add chilli powder, coriander powder, turmeric powder and salt and mix well
  • Ivy Gourd Fry is now ready!!!

Step by Step Procedure:

Wash Ivy gourd well in water
