Egg Fried Rice

IMG_7911This is a simple and popular Indo Chinese recipe. It can be prepared easily if you have cooked rice ready. The taste will be so excellent and the preparation will be so simple. It can be easily done and can be packed as a lunch for kids. This is a healthy dish as it has egg and vegetables in it. The recipe is as follows

Preparation Time: 25minutes

Cooking Time: 25minutes

Ingredients:

  • Basmati Rice -1cup cooked
  • Eggs -2
  • Big onion -2
  • Biriyani leaf -1
  • Ginger garlic paste -1tblsp(For homemade ginger garlic paste Click here –> Click)
  • Mixed Vegetables -1 ½ cup (I used Cabbage, carrot and beans)
  • Capsicum -1/4cup
  • Curd -3tblsp
  • Soya sauce 1tblsp
  • Coriander leaves -1spring
  • Pepper powder/Milagu thool -2tsp
  • Salt -1tblsp or as required
  • Oil -3tblsp or as required
  • Ghee -3tsp or as required

Preparation:

  • Cook rice and keep (Don’t cook it too much. Just 3/4th cooked rice is enough)
  • Wash and chop all the vegetables into small pieces
  • Chop onion and capsicum into small pieces

Procedure:

  • Take rice in a pressure cooker and add 1cup water and keep for 1whistle in high flame and in low flame for 3minutes and switch off the flame
  • Pour ghee in a pan
  • Add the eggs and fry
  • Add salt and pepper in it and scramble it and keep aside
  • Pour oil in a pan
  • Add biriyani leaf, onion and fry till onion becomes golden brown in color
  • Then add ginger garlic paste and fry
  • Then add vegetables and mix well
  • Then add capsicum and mix well
  • Then add curd and mix well and cover and cook till all the vegetables gets cooked (Do not add water)
  • Then add soya sauce and mix well
  • Then add coriander leaves and mix well
  • Then add the cooked rice and mix
  • Then add egg and mix well
  • Egg Fried Rice is now ready!!

Step by Step Procedure:

Pour ghee in a pan. Add the eggs and fry. Add salt and pepper in it and scramble it and keep aside
