Carrot Egg Fry

IMG_8819This is a tasty fry made with carrots and eggs. It tastes best as a side dish for rice. Carrots and eggs has a lot of health benefits and they can be combined and added to our diet. The recipe is as follows

Preparation Time: 15minutes

Cooking Time: 25minutes

Ingredients:

  • Carrots -2
  • Egg -1
  • Big Onion -1
  • Curry leaves –A spring
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Green chilli -2
  • Salt -1tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Grate carrots using a grater
  • Chop onion into small pieces

Procedure:

  • Pour oil in a pan
  • Add mustard seeds and after they crackle add green chilli, curry leaves, onion and fry till onion becomes golden brown in color
  • Then add carrots and cover and cook till it gets cooked
  • Then add egg and salt and mix well
  • Carrot Egg Fry is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add mustard seeds and after they crackle add green chilli, curry leaves, onion and fry till onion becomes golden brown in color
