Carrot Chutney

IMG_7959This is a nice and simple chutney which goes well as a side dish for idli and dosa. This is a healthy and tasty chutney which can be prepared easily. Carrots contain fiber, vitamin K, potassium, folate, manganese, phosphorous, magnesium, vitamin E and zinc. Carrots also helps to improve our vision. So it can be eaten raw or made as halwa or as chutney and can be taken in our diet

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Carrots -2
  • Red Chilli -2
  • Urad Dal/Ulutham parupu -1/2tsp
  • Coconut -3tblsp
  • Tamarind –a small 2inch piece
  • Salt -1tsp or as required
  • Oil -1tblsp or as required

Preparation:

  • Grate carrots using a grater
  • Chop coconut into small pieces

Procedure:

  • Pour oil in a pan
  • Add urad dal, red chilli and carrots and fry till the raw smell leaves off
  • Then grind it with coconut, tamarind and salt by adding little water
  • If you wish temper it with mustard seeds and curry leaves and pour it on the chutney
  • Carrot chutney is now ready!!!

Step by Step Procedure:

Pour oil in a pan. Add urad dal, red chilli and carrots and fry till the raw smell leaves off
