Carrot Beetroot Fry

IMG_7521This is a healthy and a tasty fry made with carrot and beetroot which goes well as a side dish with rice. The mixture of carrot and beetroot gives a wonderful taste. These two vegetables has a lot of health benefits and we have it together. We can grate them both using a grater and cook. If you cut it into pieces it will take time to cook and if you grate them it will get cooked easily

Preparation Time: 15minutes

Cooking Time: 25minutes

Ingredients:

  • Carrots -2
  • Beetroot -1
  • Big Onion -1
  • Green Chilli -2
  • Curry leaves- A spring
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Cumin seeds/Seerakam -1/2tsp
  • Coconut -1/4 cup
  • Fennel seeds/Perunjeerakam/Sombu -2tsp
  • Salt -2tsp or as required
  • Oil -1tblsp or as required

For Grinding:

  • Coconut -1/4 cup
  • Fennel seeds/Perunjeerakam/Sombu -2tsp

Grind these coarsely without adding water

Preparation:

  • Wash and peel the skin of carrot and beetroot and grate them using a grater
  • Chop onions and green chilli

Procedure:

  • Pour oil in a pan
  • After oil gets heated, add mustard seeds, urad dal and cumin seeds and after they splutter add green chilli, curry leaves and onion and fry
  • Then add carrot and mix well
  • Then add beetroot and mix well and cover and cook till it becomes soft
  • Grind coconut and fennel seeds in a mixer and add this and mix well
  • Carrot Beetroot fry is now ready!!!
