Brinjal Tomato Fry/Kathirikai thakkali poriyal

IMG_7625This is a tasty and spicy fry which goes well as a side dish for rice, biriyani and fried rice. The taste will be nice and tangy as tamarind water is added to it. It is a mouthwatering dish and can be prepared easily when we are in a hurry. It is a healthy dish and brinjal has many health benefits. The recipe is as follows

Preparation Time: 20minutes

Cooking Time: 25minutes

Ingredients:

  • Brinjal -2
  • Tomato -1
  • Garlic -2pods
  • Mustard seeds/Kadugu -1tsp
  • Cumin seeds/Seerakam -1tsp
  • Curry leaf –A spring
  • Red chilli powder/Milagai thool -2tsp or as required
  • Turmeric powder/Manjal thool -1tsp
  • Tamarind water -3tblsp
  • Salt -2tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Chop brinjal and tomato into small pieces
  • Extract the juice from tamarind

Procedure:

  • Pour oil in a pan
  • Add mustard seeds and after it crackles add cumin seeds, garlic and curry leaf and fry
  • Then add brinjal and fry till it gets cooked
  • Then add tomatoes and mix well till it gets soft and mushy
  • Then add salt, chilli powder and turmeric powder and mix well
  • Then add tamarind water and boil
  • Brinjal Tomato fry is now ready!!!
