Beetroot Kootu/Beetroot Fry with tamarind sauce

IMG_7728This is a fry made with beetroot which goes well as a side dish for rice. The taste will be different than normal fry but will be very nice as it is cooked with tamarind sauce. Beetroot has a lot of health benefits and so it can be cooked in different types and can be added in our diet. The recipe is as follows

Preparation Time: 10minutes

Cooking Time: 25minutes

Ingredients:

  • Beetroot -1
  • Coconut -1/4cup
  • Red chilli powder/Milagai thool -1tblsp
  • Cumin seeds powder/Seeraka powder -1tsp
  • Turmeric powder/Manjal thool -1tsp
  • Small onion -5
  • Tamarind water -1/4 cup
  • Mustard seeds/Kadugu -1tsp
  • Fenugreek/Venthayam -1tsp
  • Small onion -10
  • Curry leaves –A spring
  • Salt -1tblsp or as required
  • Oil -1tblsp+1tblsp

For Grinding:

  • Coconut -1/4cup
  • Red chilli powder/Milagai thool -1tblsp
  • Cumin seeds powder/Seeraka powder -1tsp
  • Turmeric powder/Manjal thool -1tsp
  • Small onion -5

Grind this coarsely without adding water

Preparation:

  • Peel the skin and chop beetroot into small pieces
  • Chop onion into small pieces
  • Grind coconut, chilli powder, onion, cumin powder and turmeric powder without adding water

Procedure:

  • Peel the skin and chop beetroot into small pieces
  • Pour oil in a pan
  • Add beetroot to it and fry and cover and cook it
  • Grind coconut, chilli powder, onion, cumin powder and turmeric powder without adding water and add it and mix well
  • Then add salt and tamarind water and boil
  • Pour oil in a pan
  • Add mustard seeds, fenugreek, onion, curry leaves and fry it and add it to the above mixture and mix well
  • Beetroot kootu is now ready!!!

Step by Step Procedure:

Peel the skin and chop beetroot into small pieces

IMG_7704Grind coconut, chilli powder, onion, cumin powder and turmeric powder without adding water and add it and mix well

IMG_7710Pour oil in a pan. Add mustard seeds, fenugreek, onion, curry leaves and fry it
