Beetroot Curry/Beetroot Pulikulambu

IMG_8873This is a tasty and a healthy curry which is made with beetroot. This can be taken with steamed rice, idli and dosa. The taste will be very nice and it can be given for kids who do not like to eat beetroot fry. Beetroot has a lot of health benefits. So we can add it in curry or in fry and can add it in our diet

Preparation Time: 20minutes

Cooking Time: 35minutes

Ingredients:

  • Beetroot -1(small)
  • Big Onion -2
  • Garlic -3
  • Tomato -1
  • Curry leaves –A spring
  • Mustard seeds/Kadugu -1tsp
  • Fenugreek/Venthayam -1tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Green chilli -1
  • Red chilli powder/Milagai thool -2tsp
  • Turmeric powder/Manjal thool -1tsp
  • Coriander powder/Malli thool -2tsp
  • Tamarind Water -1/4 cup (Soak lemon size tamarind in water and extract the juice)
  • Salt -2tsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Chop onion and tomato into small pieces
  • Chop garlic and green chilli into small pieces
  • Extract the juice out of tamarind

Procedure:

  • Pour oil in a pan
  • Add mustard seeds and after they crackle, add urad dal, fenugreek seeds, curry leaves and onion and fry till onion becomes golden brown in color
  • Then add garlic and fry
  • Then add tomatoes and mix well till it becomes soft
  • Then add beetroot and fry well
  • Then add red chilli powder, coriander powder, turmeric powder, salt and tamarind juice and boil
  • Beetroot Curry is now ready!!!

Step by Step Procedure:
