Sirukeerai Kulambu/Tropical Amarnath Kulambu

Sirukeerai KulambuThis is one of the tasty and healthy kulambu which can be served with rice or as a side dish for dosai and idli. Sirukeerai is good source of vitamin A, vitamin C, and folate; they are also a source some dietary minerals including calcium, iron, potassium, zinc, copper, and manganese. This possess dietary fiber, which helps in enhancing digestion. Sirukeerai is also a very helpful with people who suffer from diabetes. So this kulambu is very healthy and it will be tasty too.

Preparation Time: 20minutes

Cooking Time: 25minutes

Ingredients:

  • Sirukeerai/Amarnath leaves -2cups
  • Big Onion -1
  • Tomato -1
  • Garlic – 4pods
  • Red chilli -2
  • Red chilli powder/Milagai thool-1tblsp
  • Coriander powder/Malli thool -2tsp
  • Turmeric powder/Manjal thool -1tsp
  • Hing/Asafoetida/Perunkaya thool -1tsp
  • Tamarind extract -1cup(soak small amount in water and extract the juice alone)
  • Mustard seeds/Kadugu -1tsp
  • Fenugreek dseeds/Venthayam -1tsp
  • Cumin seeds/Seerakam -1+1tsp
  • Curry leaves -A spring
  • Water -1/4cup
  • Salt -1tblsp or as required
  • Oil -2tblsp or as required

Preparation:

  • Wash and Chop Sirukerai into small pieces
  • Chop onion, garlic and tomato into small pieces
  • Take the juice out of tamarind and keep

Procedure:

  • Wash and Chop Sirukerai into small pieces
  • Take this in a cooker and add asafoetida, cumin seeds, water and pressure cook for one whistle and after the pressure goes by itself mash it partially in a mixer
  • Pour oil in a pan
  • After oil gets heated, add mustard seeds and after it crackles add cumin seeds, fenugreek, red chilli, garlic and curry leaves
  • Then add onion and fry till it becomes golden brown in color
  • Then add tomatoes and fry till it becomes soft and the raw smell goes away
  • Then add red chilli powder, coriander powder, turmeric powder and salt and fry
  • Then add the tamarind extract and boil
  • Then add the sirukeerai leaves and boil
  • Sirukeerai Kulambu is now ready!!!

Step by Step Procedure:
