Carrot Beans Fry/Carrot beans poriyal

IMG_7384This is a fry which goes well as a side dish for rice. This is a simple fry which is healthy. Carrots increase saliva and supply essential minerals, vitamins and enzymes that aid in digestion. Eating carrots regularly may help prevent gastric ulcers and other digestive disorders. Carrots kill harmful germs in the mouth and help prevent tooth decay. Fresh green beans are very low in calories and contain no saturated fat. These lean vegetables are a very good source of vitamins and minerals. So we have to add these vegetables in our diet.

Preparation Time: 15minutes

Cooking Time: 25minutes

Ingredients:

  • Big Onion -1
  • Carrot -2
  • Beans -10
  • Mustard seeds/Kadugu -1tsp
  • Urad Dal/Ulutham parupu -1/2tsp
  • Cumin seeds/Seerakam -1tsp
  • Coconut -1/2cup
  • Fennel seeds/Sombu/Perunjeerakam -2tsp
  • Green chilli -3 or as required
  • Salt -2tsp or as required
  • Oil -2tsp or as required

For Grinding:

  • Coconut -1/2cup
  • Fennel seeds/Sombu/Perunjeerakam -2tsp
  • Green chilli -3 or as required

Grind this coarsely without adding water

Preparation:

  • Chop onion into fine pieces
  • Wash and chop carrot and beans into fine pieces
  • Grind green chilli, coconut and fennel seeds coarsely without adding water

Procedure:

  • Pour oil in a pan
  • After oil gets heated add mustard seeds and after it crackles add urad dal, cumin seeds, onion and fry
  • Then add carrot and beans, salt and mix and cover with a lid and cook
  • Grind green chilli, coconut and fennel seeds coarsely without adding water and add this and mix well
  • Carrot beans Fry is now ready!!!

Step by Step Procedure:
