Brinjal Chutney/Kathirikkai chutney/Egg plant chutney

IMG_7209It is a nice flavorful chutney that goes well as a side dish for idli, dosa and you can even have it for rice too. Botanically, the brinjal is a fruit, not a vegetable and the brinjal plant grows just like tomatoes as vines but this has a lot of health benefits. Brinjal is considered to be high in water content but low in calorie. This feature makes it very ideal as a healthy diet for people who want to reduce weight. Brinjal helps in increase in iron production. Brinjal has good amounts of vitamin C which make it an effective anti-viral and anti- bacterial source.

Preparation Time: 15minutes

Cooking Time: 20minutes

Ingredients:

  • Brinjal/Kathirikkai/Eggplant -2
  • Big Onion -1
  • Tomato -1
  • Red chilli -2
  • Coconut -3tblsp
  • Tamarind -1inch piece
  • Salt -1tblsp or as required
  • Oil -1tblsp or as required

For Tempering:

  • Mustard seeds/Kadugu -1tsp
  • Urad dal/Ulutham parupu -1tsp
  • Curry Leaves -A spring
  • Oil -2tsp

Preparation:

  • Chop onion, tomato into small pieces
  • Wash and chop brinjal into small pieces and immerse it in water else the color will change

Procedure:

  • Pour oil in a pan
  • Add red chillies and fry
  • Then add onion and fry till it becomes golden brown in color
  • Then add tomatoes and fry till it becomes soft and the raw smell goes away
  • Then add brinjal and fry well
  • Then add salt and mix well and switch off the flame
  • After it cools down , grind it with coconut and tamarind
  • Add water if necessary and grind well
  • If required temper by pouring oil and adding mustard seeds, urad dal and curry leaves and pour it into the chutney and mix well
  • Brinjal Chutney is now ready!!!
