Mixed Vegetable Kurma

IMG_6902This is a flavorful and tasty multipurpose curry which goes well with chapathi, poori, parota and idiyappam. The vegetable kurma and chapathi combo is mostly served in all restaurants. This is a nutritious dish with a lot of vegetables in a coconut based gravy. For those who hesitate to eat vegetables and for children who gives trouble in eating vegetables, you can try vegetable kurma like this so that the vegetables go inside. It is very healthy and simple to make. We can see about this recipe now.

Preparation Time: 30minutes

Cooking Time: 30minutes

Ingredients:

  • Carrot -1(You can use any vegetables of your choice)
  • Green beans -1
  • Potato -1
  • Onion -2
  • Tomato -1
  • Red chilli powder/Milagai thool -2tsp
  • Fennel powder/Sombu powder/Perunjeerakam podi -1tsp
  • Turmeric powder/Manjal podi -1/2tsp
  • Coriander powder/Malli podi -1tsdp
  • Cumin seeds powder/Seeraga podi -1tsp
  • Roasted Poppy seeds/Khuskhus /Kasa kasa -1tblsp
  • Coconut -1/2cup(grated)
  • Garlic -3cloves
  • Green chilli -1
  • Fennel seeds/Sombu/Perunjeerakam -1tsp
  • Coriander leaves/Cilantro/Malli leaves -2spring
  • Salt -1tblsp or as required
  • Oil -2tblsp or as required

For Grinding:

  • Poppy seeds/Khuskhus /Kasa kasa -1tblsp
  • Coconut -1/2cup(grated)
  • Garlic -3cloves
  • Green chilli -1

Grind everything to a smooth paste by adding water

Preparation:

  • Dry fry poppy seeds and keep
  • Wash and chop all the vegetables, onion and tomato and keep
  • Grind everything given under “For Grinding” to a smooth paste by adding water

Procedure:

  • Pour oil in a pan
  • After oil get heated, add fennel seeds
  • After they crackle add onions and fry
  • Then add carrot, potatoes and green beans and fry well
  • Then add tomatoes and fry well
  • Then add red chilli powder, turmeric powder, coriander powder, cumin powder and fennel powder, salt and mix well
  • Add some water and allow to boil on high flame till the vegetables gets cooked
  • Dry fry poppy seeds and keep
  • Grind that poppy seeds with coconut, garlic and green chilli into a fine paste by adding water
  • Add this paste and mix well
  • Then keep it in low flame for 10minutes till it reaches gravy consistency and switch off the flame
  • Add coriander leaves and mix well
  • Mixed vegetable kurma is now ready!!!
